Roman, Canasta, Gentile and Cappuccina
The "Romana" lettuce seems to have originated in Italy. Also known as marulla or spadona (Lactuca sativa L. var. longifolia), its leaves are very elongated in shape, with a strong rib and evident veins. The name marulla is common in Ancona, while spadona is used in Foligno.
The 'Canasta' variety is a head-shaped variety with broad, rippled, red-green leaves, bright, with a semi-open lump; slightly crunchy. It is rich in fiber, potassium, vitamins A and C. It also contains moderate amounts of vitamins D, E, K, calcium, phosphorus, magnesium and sulphur. It has a laxative action and mild analgesic and sedative properties. Due to its low calorie content, it is particularly suitable for low-calorie diets.
The "Gentile" variety is a sweet-tasting lettuce, which can be eaten either raw or cooked. The head is open with rippled edge leaves of a rather crunchy consistency, with colours ranging from pale green to purple-red. Scientifically it is indicated with the name Lactuca sativa var. secalina. The crunchy texture that characterizes it, when eaten raw, also increases the sense of satiety.
The "Cappuccio" or "Cappuccina" is an intense and brilliant light green colour. It produces a very voluminous and rustic head. The leaves are rounded, wide, with entire undulating margin jagged in some cultivars and the lamina corrugated between the secondary veins.
