Cerphony
Chervil, or Anthriscus cerefolium, is an annual plant native to southern Russia. However, it has been widespread throughout Europe since Roman times, when it was imported by the Romans. Chervil, as well as being appreciated for its taste, has been known since ancient times for its phytotherapeutic qualities. Most of its properties are due to the rich content of vitamin C and carotene, with a strong antioxidant effect. In addition, the leaves are a good source of mineral salts, especially iron, calcium and magnesium. It has a certain resemblance to parsley.
IN YOUR CUISINE Chervil can replace parsley in all preparations. It is particularly appreciated in the velvety or when you prefer a more delicate aroma than just parsley. Great for dressing potato salad, zucchini, mushrooms or eggplant trifolate and baked tomatoes. Also ideal for marinating fish or for cooking sauce of mussels and clams.
